Gooseberry Pie ~ Linda Cummings


In an aged enameled pie dish is a delicious gooseberry pie, the fruit encased in a crisp, sugar drenched pastry shell. A slice has been removed and presented on a fine porcelain plate with a dollop of cream. The "granite" topped prep board features a bowl of pastry mix, a jar of sticky gooseberry jelly, a glass jar of flour, a wooden rolling pin with partly rolled pastry, a bowl of juicy ripe gooseberries and some gooseberries that have escaped from the bowl.

Thanks for the kind words everyone & to Sumaiya for posting the pie up here! I enjoyed making this one so much that I actually then had to make the real thing for myself with last year's gooseberries from the freezer! I think I enjoyed that as much too..except the mini doesn't have the calories!!
